Celery soup and Tomato skins

Anyone got a good recipe for celery soup that actully makes it taste nice .:D
Also I have a kilo of tomato's that I want to turn into pasta sauce ,should they be o.k. to freeze when done as I live alone so only use small amounts of pasta at a time .
Does anyone put the toms in boiling water first to remove the skins, or is it only me who isn't keen on tomato skins

Delia's celery soup is really REALLY nice.

I usually remove the skins of tomatoes. Hi Jackie,
I'm another one who takes the skin off tomatoes...they freeze really well.
I'll second the recipe that squeaky linked to. None of like celery but we all enjoyed that soup.

I made a yummy celery and potato soup yesterday:
In 1oz butter cook 1 chopped onion, 1 whole head chopped celery and 500g chopped potatoes for about 10- mins, lid on. Add 750ml light chicken/veg stock and simmer for about 30 mins.
blend until smooth and add 150ml double cream. season.
serve with grated cheese on top, makes 6 good bowls and freezes really well.0
