Dill sauce is the classic accompaniment to salmon, along with boiled new potatoes, mixed seasonal vegetables and a crisp, dry white wine.

Cous-cous is served with fish on the North African & Middle Eastern coast, but usually with something a lot more robust than smoked salmon.

Ditch the cous-cous. Cut up the smoked salmon into little bits, mix it with some scrambled egg (free range of course, if not actually laid by either Messrs. Oliver or Fearnley- Whittingstall themselves) and serve on wholemeal toast.

I have a fish kettle but if I can't be bothered with it I just whack it in the oven in some foil with herbs and lemon, oven quite low, shortish cooking time or it can get dry.

We often buy these from Lidl and Aldi when on offer, prefer Lidl as they are often better quality. We use microwave (850w) for 2 fillets we put them in a glass dish with loose fitting lid and micro for just 5 mins in total, its plenty. For a really quick tea do with Instant Cheesy mash potato (1min with hot water) and served with green beans (3 mins in micro) if you want a slightly chinese flavour add soya sauce over them, if you fancy a nice sauce a quick hollandaise or white sauce is nice. The whole lot would take around 10 mins. This really does work in micro and keeps fish moist.Enjoy!!!

I cook it wrapped in foil. Sometimes I do it with a small piece of butter on top and some lemon juice, or a splash of white wine & lemon. Usually have it with new potatoes, tossed in parsley & butter, and asparagus.

Grill it, Steam it, Bake it. If grilling, don't worry about the tinfoil wrap, just grill as you would sausages. If steaming, do it like any other fish or veg. Baking is where you would use the tinfoil wrap and butter etc.

When I am not pregnant, I eat it with a bit of pink showing in the middle, otherwise you will know it is cooked if it has lightened in colour and you can see the white fat coming out of the flakes.

We also use a sauce made from coconut cream, coriander, chilli and coriander paste, and we bake the salmon in the sauce in the oven in a pyrex dish. The remainder sauce can be frozen and goes very well with any other chicken or fish.

Got some salmon on special from Asda on Christmas Eve and put it in the freezer. Cooked it on the bottom layer of the steamer, with baby potatoes and veg on the other layers for about 1/2 hour. Served with parsley sauce and it was lovely

    Hi all

What's the best thing to go with salmon> Could I use salmon with green pesto, watercress and rice? We had new pots yesterday so I don;t want them again.

    Many thanks
