what to have with salmon???

ive just been on the somerfield website and they have salmon fillets on offer for £1.99
its not somthing i usually buy as its normally a bit to pricey for me but i did think i might get some of these on thursday when i do my shopping?
but not sure what to do it with??

what do you have with salmon??

    i have it with green beans and warm potato salad.

    for the pot sal, i would dice up a few potatoes and dice an onion. boil the tatoes and gently fry the onion.

    when all are cooked put them back in the same pan, give em a bit of a smush around so the onion and potato mix together a little bit - so its not quite mash but not all separate pieces.

    then mix together some olive oil, a bit of mustard and some vinegar - i use white wine vinegar. pour the mix over the spud/onion mix, give it another stir up and serve with salmon and green beans.

    then eat.

    If you have a chinese supermarket near you, you could have it with Pak choi or Choi sum, very nice green veg and full of good nutrients (brassica family), lightly stir fried in sesame oil with chopped garlic and grated ginger, splash of soy sauce (and chilli if you like a bit of spice)

    For a nice carb side dish, brown basmati rice, steamed or boiled, with a drop of oil and some soy sauce on it.

    It's very nice with some cous cous made up with some Marigold Veggie Stock, olive oil and lemon juice, and some green veg - I often do broccoli.

  • I spread some pesto over the top and cook in oven. Cover with foil or put in covered dish. Have also marinaded it in lime juice and lime zest in a bowl for an hour before putting covered bowl into oven.
    Both are very easy + v nice.

    Oh I can recommend those salmon fillets had them for dinner last night, its something I had never had either, I served mine with baked potatoe (done in the oven) and brocoli. I pot a knob of butter and seasoned the salmon with thyme and parsley, salt n pepper and wrapped in tin foil parcel and baked for about 25 mins, I have to say it was delicious, am going back to Somerfield tomorrow to stock up on more for the freezer.

    Try them with diced sweet potatoes. If you cut the potatoes into inch-ish cubes and roast them in the oven with a little olive/rice bran oil you can do the salmon at the same time, just put the potatoes in about 5-10 mins before the salmon. If you serve it with broccoli and sweetcorn it looks really colourful on the plate. My kids hate most fish but love salmon served this way, just seasoned with salt, plenty of pepper and a little lemon(or try squeezing a small orange over it before you cook it for a change).

    Boiled baby potatoes, noodles, potatoe rostii, whatever you like really, as others have said goes well with stir fry type veg like Pak Choi. My fave is asparagus and Hollandise sauce MMMMM!!!

    I have it with rice with some butter, garlic salt and fried mushrooms stirred into it and a pile of carrots cooked in butter. Schwartz do a gorgeous lemon butter sauce if you fancy a treat!

  • These are all great ideas :) but if you're lazy like me, I usually just poach the salmon and have it with mashed potatos and some butter or whatever white/creamy sauce I happen to have in the house :)
