I first made this in School over 20 years ago and have been making it ever since. It’s really cheap and healthy; with the added mushrooms and veg in the soup it all counts to your 5-a-day. :j

Minestrone Meatballs
Ingredients
Mince – enough for your family
1 Egg
Grated Garlic – optional extra
Mixed Herbs – optional extra
Mushrooms – as many as you like
1 tin (maybe 2) Minestrone Soup – supermarkets own brand healthy option
Heat oven to Gas Mark 5.
Bind the Mince with an Egg and mix in the Garlic and Mixed Herbs (these can be left out if you don’t like them). Make as many golf ball size meatballs as you need. Fry until browned and sealed then pop into a casserole dish.
Chop up some Mushrooms and add to the dish. Pour the tin of Minestrone Soup over the meatballs (make sure they are well covered this is why you may need 2 tins depending on the size of your family), if using thick soup add some water make it a bit runny then bang in the oven for about an 45mins. Serve with spaghetti or mash.

Chocolate Truffels
these are very yummy! Im planning on making them to give as christmas presents and might add a little rum to them
200g dark chocolate
6 tbsp of strong coffee
2 tbsp runny honey
cocoa powder for coating
Melt the chocolate over a low heat till all melted and runny
stir in the coffee and stir through. The chocolate will begin to thicken
add the honey one tbsp at a time and mix in well till lovely and silky
pop into the fridge for about half an hour or until set
form small balls and coat with cocoa powder
yummy! Makes about 20-25 balls0 -
CHICKEN PIE - easy peasy :drool:
Chicken cut into chunks (enough for your family)
Mushrooms cut into quarters
Onion – sliced
Can of Mushroom Condensed Soup (BOGOF or if you have Home Bargains they are usually at least half price in there)
Frozen Puff Pastry
Heat oven to Gas 5. Fry the chicken for a few minutes until browned, throw in the mushrooms and onions and cook until soft. Mix in the can of soup, no need to heat this just make sure everything is well coated with the soup. Chuck it all in an oblong ovenproof dish. Place Puff Pastry on top, sealing the edges and bang in the oven for 45 mins or so; taking care not to burn the pastry.

This receipe is nice and hearty for the winter and really quick to make.
Bacon Sausage & Beans with Twist :rotfl:
Cook Sausages & Bacon then cut into thick slices.
Brown chopped Onion & Mushrooms
Open Tin Beans (large) & Tin Tomatoes (small)
Heat all of above in a pan, mixing well
Add grated Garlic, Mixed Herbs (if you want, gives a nice flavour)
Heat through until piping hot.
Toast some POTATO CAKES and pour mixure over top.

1 1/2 large sausages per person cut into quarters
1 large onion chopped
1 clove garlic crushed
1 or 2 tins of tomatoes
Pepper to season
Worcestershire sauce (I prefer Regge Regge sauce available in Sainsbury's) or any other sauce you like really just to spice it up a bit
Pasta
Fry the onion and garlic with a little oil in a large pan or frying pan if you prefer. Add the sausages and cook for about 5 mins.
Menwhile put whichever pasta you have chosen onto boil
Add the tinned tomatoes and season with pepper (you could use a little salt if you like but I'm cooking for little people so I never do and its fine without)
Once the sauce has thickened to your personal consistency and the sausages are thoroughly cooked (about 10 mins usually) add the worcestershire sauce or regge regge
Stir in the cooke pasta and serve.
Never fails to fill hungry tummies when there's not much in the cupboards and not much time0 -

I don't eat eggs but OH tells me these are delicious!
Heat oven and grease a small ( size depends on how many you do) baking tin.
You'll need one beef tomato (make sure you get one that has a flat bottom) cut off the top and scoop out seeds and flesh. These can be used in soup or stock if you're making it or composted. Place tomato in greased tin.
Add some freshly ground black pepper and then crack one egg into tomato. Replace top.
Place in oven and cook til egg is set to your particular taste.
Meanwhile make your soldiers as required!!!!!!!!!!!

Meat and Egg Pie (Main Course)
one packet puff pastry
6 ozs chopped pork
2 med eggs
milk
Cut pastry block in half and roll out to fit casserole lid
cut up chopped pork and place in base then switch up two eggs add pinch salt and pepper if liked, then mix in a little milk as you would for scrambled eggs pour over chopped meat to cover then roll out second half of pastry to make lid, brush with milk or egg if preferred and bake in hot oven as for pastry when cooked serve with chips and this is quite a substantial cheap main meal. This was a great midweek standby and the children loved it0 -
homemade hobnobs
8oz sr flour
8oz sugar
8oz porridge oats (smartprice or same)
8oz butter, clover or stork marg
1tbsp syrup, honey or maple syrup
1tbsp hot water
1/2 tsp bicarb soda
mix flour, sugar and oats in a large bowl
melt marg, syrup and water gently, preferably in micro as it needs to be just melted and not hot, stir in the bic soda and pour onto the dry ingredients
mix well and shape into balls the size of a walnut, i get about 45-50 biscuits from the mix,
put on greased baking trays and flatten slightly with a fork
bake 180oc, gas 4 for 15 mins until golden, cool slightly then lift onto a tray
i have put in a teaspoon of ginger, sometimes chopped almonds, smarties have been used by others, see the homemade hobnobs thread for other ideas0 -
Date and Ginger Muffins
1 cup (160g) chopped dates
1/3cup (80ml) water
1/4 teaspoon bicarbonate of soda
2 cups (300g) self-raising flour
1 cup (150g) plain flour
2 teaspoons ground ginger
1/2 teaspoon mixed spice
1 cup (200g) firmly packed brown sugar *
2 teaspoons grated orange rind
1 egg, lightly beaten
1 1/4 cups (310ml) milk
1/4 cup (60ml) vegetable oil
Combine dates and water in a pan, bring to the boil, remove from heat. add soda, stand 5 minutes.
Sift dry ingredients into large bowl, stir in date mixture and remaining ingredients.
Spoon mixture into prepared tin. Bake in a moderate oven 180c for about 15/20 minutes. Makes 12.
Can be served warm as a desert with a caramel sauce.
Caramel Sauce
1 cup (200g) firmly packed brown sugar *
1 cup (250ml) cream
40g butter
Combine all ingredients in a pan, stir over heat, without boiling, until sugar is dissolved, then simmer, without stiring, for about 3 minutes, or until thickend slightly.

Growing Communities Organic box scheme supplied me with kale last week :rolleyes: and their newsletter provided a recipe for cooking it
which turned out to be really nice :T , so here it is.
bunch of Kale
2 cloves chopped garlic (or 1/2 tsp powdered)
chunk (about an inch) of finly chopped fresh ginger (or tsp powdered)
2 tsp soy sauce
1 tbs olive oil
Wash the kale, remove the central stalks then shred the leaves.
Heat the oil and add the garlic and ginger and saute for about a minute. Add the kale and stir it round until softened, about 5-7 minutes. Add the soy sauce, reduce the heat a little and cook for another couple of minutes. Sprinkle with toasted sesame seeds if preferred and serve.
I added this to a vegetable and rice stir fry and can honestly say that I enjoyed the kale for the first time ever. :jMy first reply was witty and intellectual but I lost it so you got this one instead
