i'm a big fan of rice in chicken soup, but i also have a bag on lentils lingering in the cupboard so i might throw some of them in too!:happyhear0 -
I reckon my recipe is the simplest! I cover the chicken carcasss with water, add a some large chunks of chopped carrot, celery and quartered onions, a stock cube and a few cloves. Let it simmer until the chicken is falling to pieces - a couple of hours. I then add sliced mushrooms and egg noodles. Then I add frozen peas. I pick out most of the bones before I add the mushrooms - otherwise just leave them on the side of the soup bowl.0

ok everyone. Have successfully made my lentil soup - it's yummy!! and i have loads to put in the freezer. Tomorrow i'm going to have a bash at chicken soup. I have the chicken and stock. Just wondering what else to put in with it. I was thinking parsnip and potato - What else?? Onion? Also last time i made it it was really salty so wasn't very nice. Am i correct in thinking that it's because everytime it boiled down and needed more liquid i added more stock instead of just hot water?

I think chicken soup can mean different things to different people. In my house it is soup mix (barley, peas, lentils) simmered in stock. When they are cooked I add carrots, leeks, parsley, celery a couple of chopped up chicken breasts and black pepper. Simmer until the chicken and all the veg are cooked through.

I have just bought some pearl barley today so i think i'll put some of that in it too. Does it kind of expand when your cooking it as i've never used it before.
I was thinking pearl barley chicken stock, parsnip, potato and chicken kind of shreaded off the cooked chicken i have here. Should i put carrot in it?It is better to be thought of as an idiot than to open your mouth and remove all doubt

Yes the barley does expand....it probably doubles in size. What you have planned sounds good. I would add the carrot but again it's down to personal choice.
