Hello all.
I've just made some custard, which I was intending to turn into vanilla ice-cream by adding in some whipped cream and freezing. But I've just discovered that I've bought single cream rather than whipping cream by accident. Can I freeze the custard as it is and eat it as custard ice-cream? Or will it keep until tomorrow in the fridge? (which is when I can buy some double cream). I don't want to waste it as its rather expensive to make.

You can whip single (and double) cream, honest
There's a trick to it... just add about a fifth (by volume) of water to the cream and then whizz or whisk it up. Stick blenders are ideal for this.

Oh! And if you're just doing "rough sums" say you have 250mil of cream... a fifth is 50mils of water - and three tablespoons (about 45mil) will be fine.
