Undercooked chicken!!!!

I roasted a chicken yesterday and we used the breast meat for dinner, which was perfectly cooked btw, but later in the evening when I went to carve the rest into joints for the freezer I noticed the meat around the hip joint and underneath was still rather pink looking 
I've left them in the fridge for now as I'm not sure whether they're going to be safe to re-heat/cook again. What do you all think? Would you roast the legs again as they are then strip the meat off, or strip meat off first and cook through in a casserole?
Obviously we'll have to eat it straight away as I know you can't re-heat more than once. Please don't say I have to throw them away as this was a very expensive organic FR chicken, but obviously I don't want to risk poisoning everyone

Strip the meat and use in stir fry or curry or sweet and sour or casserole.

Yes - I'd be inclined to put the chicken in first on its own and cook it through before adding the other ingredients.
I also will often zap the bits in the microwave (well covered) to cook them quickly before adding them to something that needs more gentle cooking.
