Thinking of changing to Sainsburys Life Insurance policy - anyone had any dealings with? Any pros/cons? Any comments would be appreciated.

I haven't personally had any dealings with Sainsbury's life insurance, but here are a couple of thoughts on them.
The service is provided by Legal & General - a big name in insurance, but as they are tied to a single provider, they may not be the cheapest on the market. It's worth getting a quote from them and also from a comparison site such as MoneySupermarket to see how competitive they are.
If you're replacing an existing life insurance policy, make sure that you have confirmation your new policy is in force before cancelling the original policy.0
