HELP PLEASE ! Jamie's Slow Roasted Leeks with Parpadelle

Was going to make this tonight as we have loads of leeks in the garden but seem to have lost the paper I scribbled it down on. Don't suppose anyone else jotted it down from the 2nd of his new programmes this week?

    jsut looked in his 'at home' book and the only thign i can find is 'cheats papperdelle with slow braised leeks and crispy porcini pangrattato. it looks a bit like a tagliatelle int eh picture if thats helpful at all?

  • need

    5 big leeks
    olive oil
    3 good knobs of butter
    3 clovesfo galric - peeled and sliced
    sprigs of thyme
    small wineglass of white wine
    salt and pepper
    500ml good qulaity veg or chicken stock
    12 slices parma ham
    2 x 250g packets of fresh lasagne pasta sheets
    flour for dusting
    2 handfuls of grated parmesan cheese (extra for serving)

    for pangrattato
    handful of porcini mushrooms
    1/2 a ciabatta cut into chunks
    olive oil
    2 garlic cloves
    sprig of rosemary


    method
    halve the leeks lengthways, and cut at an angle of 1cm slices, heat a saucepan, add a splash of olive oil and a knobof butter.when it starts to sizzle add the garlic, thyme and leeks. Move the leeks round so every piece gets coated. Pour in the wine , season with salt and pepper and stir in the stock. Cover the leeks with the slices of parma ham, place the lid on the saucepan and leave to simmer for 25 - 30 minutes. Once the leeks are tender take the pan off the heat

    To make the pangrattato, whizz the mushrroms and bread with salt and pepper in a food processor until it looks like breadcrumbs. Heat a glug of olive oil (i love his termanology) in a frying pan. Add the garlic cloves the rosemary and cook for a minute. then fry the breadcrumbs in the oil till golden brown,. Keep shaking the pan - dont let the breadcrumbs catch ont he bottom, Drain on kitchen paper, discard the rosemary and thyme and allow breadcrumbs to cool.

    Bring a pan of salted water to the boil. Lay the lasagne sheets ona clean surface and sprinkle with flour. PLace the sheets on top of each other and slice into 1cm strips. Toss through fingers to shake out the pappardelle, then cook in the boiling water for 2 minutes until al dente

    Remove the parma ham form the saucepan, slice up and stir back into the leeks. Season to taste with more salt and pepper, then stir in the parmesan and the rest of the butter. Drain the pasta, reserving a little of the cooking water and add the pasta to the leeks. Add soem of the cooking water too to give you a silky smooth sauce. Serve quickly with soem sprinkled pangrattato on top and with extra parmesan and thyme (as preferred by guest).

    Now to order what ingredients i need from my online shop.

    small wineglass of white wine vermouth is good to use in place of white wine because you can keep it once the bottle is open
    salt and pepper
    500ml good qulaity veg or chicken stock
    12 slices parma ham use any nice ham, not the really cheap wet stuff but parma ham is very expensive. Bacon would work too ;)
    2 x 250g packets of fresh lasagne pasta sheets use dry tagliatelle or spaghetti which is usually the chepaest pasta around
    flour for dusting
    2 handfuls of grated parmesan cheese (extra for serving)

    for pangrattato
    handful of porcini mushrooms use fresh or leave them out
    1/2 a ciabatta cut into chunks use any bread but not the cheapest plastic sliced sort -a bit of of a French stick would be good and cheaper than ciabatta
    olive oil
    2 garlic cloves
    sprig of rosemary
