Does anybody know if there is away to scan in a text document and then edit the text within it.

Yes you need a Optical Character Recognition piece (OCR) of software, there's plenty of them around some better than other.

Abbyy fine reader is one of them and Scansoft Ominpage, both work fine I have used them.
