    Of course, copying from a book doesn't allow for brief quotes and a link, but the same idea ought to hold true. Copyright on books last for 70 years - how old is yours? :)

    Thats one of the reasons I'm quoting the source at the top of the posts (I just forgot to with my last post). I will go through and paraphrase now, as thats what I would normally do anyway. Thanks for the heads-up though :o

    Need to get back to old style in modern ways, watching the pennies and getting stuff done!

    We just finished the last of our 'Pickled Jalepenos' they were home grown too...

    I've got a store of Elderflower cordial this year, which is usually well recieved but probably not many flowers left on the trees now.

    And of course a bit later on, sloe gin (or vodka as we prefer) I'm also trying some Blackcurrant vodka, which is coming along nicely.

    FYI I haven't forgotten about this thread or the recipes it's just I haven't had the time to sit down at the computer and paraphrase the stuff. It's a high priority on my todo list. DD starts school on Monday so I might just get a chance next week. ;)

    For Christmas presents this year so far I have made:
    Lemon vinegar; white wine vinegar with the pared rind of a lemon inserted
    Herb oil: Olive oil with sage, thyme, bay & rosemary from the garden plus black pepper
    Boozy Apricots - dried apricots & a few blanched almonds soaking in a mix of brandy and some truly sickly almond liquer I won in the school tombola!

    I will make really nice lables for the bottles with decorated luggage lables with dried lavender flowers attached.

    I plan on making some HM fudge using this recipe which is really easy. I'm also going to make chocolate truffles using a recipe I've seen posted on here (must find it again :think:).

    My question is, how far in advance can I make these and for them still to taste and be fresh? :confused: I like to be quite organised and don't want to leave it too late but don't want them turning nasty either.

  • I've got an easier fudge recipe if you like:

    1 full bag sugar
    1 tin evaporated milk
    about 50g butter
    vanilla if you like

    put it all in a big pan and stir, with this depending onthe length of time cooked and stirred it can be made into either toffee, fudge or tablet.

    and as for truffles these ones last forever because there's nothing too perishable in them.

    (use own brand bicccies)

    1 pack custard creams
    1 pack bourbons
    1 pack digestives
    butter
    chocolate

    icing suger,cocoa or coconut for dusting (you can just dip in choc if you want)

    blitz the biscuits, melt butter and chocolate together add to crumbs, with shape into balls and coat with disting of your choice

    i've made some veg pickle, apple, cider and chilli jelly, apple and blackberry jelly, apple and blackberry jam, have been collecting lots locally while they're still in season! and a blackberry and lime cordial which is yum! waitroses website has some good recipes
  • My friend swears by this jam recipe (and she's used all sorts of weird fruit including watermelon!).....haven't tried it myself but if you want to give it a go:

    Fruit (weighed)
    Demerara sugar (3/4 weight of fruit)
    Juice of one lemon

    Slowly heat this mixture for an hour or so until it is the right consistency (if you put a dollop on a plate and run a spoon through it, the two sides shouldn't join back up). Put into jars and seal.

    Dead easy apparently.
