does anybody know where I can find this please. I have looked in the baking sections of Saisnsburys and Tescos but could not find it.
.. I have several cake recipes that need it that I want to try it out. Apparently it is used a lot in ready made cAkes so it is a good ingredient to have about. Thank for any help

Not seen it, what about H & B. I saw it in something for the first time the other day, I think it was a thickener in Seeds of change tomato sauce.

They do all sort of flours that are difficult to find - what do you need it for? I use it for a lot of vegan recipes.0 -
try an Asian grocer or Chinese supermarket if you've any locally, I'm sure I saw in in one of the ones I go to, think it was the Chinese0

the postage for just one or two small items is steep, but I'm sure I could make an order up to the maximum weight for that minimum postage quite easily

Amongst other things I need it because I want to make the rich moist chocolate cake that was mentioned in the baking guide given out with the Guardian newspaper a few weeks ago. Apparently this flour is a trade secret used by a lot of cake mixes. Quote from the baking guide:
"I love the texture of packet chocolate cake mixes, that fluffy softness and long-lasting moist texture. But the key ingredient that makes it like that isn't very scary and chemical.
Here's the trade secret. What they do is add a little bit of tapioca or similar flour, which does a curious thing to a cake. When wet, it swells with moisture more than any other starch, and it's often used in packet cake mixes to give that delicate moist crumb which stays soft for days."

Tesco near the rice for rice pudding etc. Just says 'tapioca' on the packet. Same place in most other stores if they stock it.One day I might be more organised...........

Never thought of looking near the rice .... thanks for the suggestion. Will def have a look tomorrow when I go to Tescos! Just for a joke I would love to ask somebody working there, esp one of the youngsters.... just to see the look of utter bewilderment on their faces but I won't :rotfl:I am still recovering from the havoc I caused when I asked them for popping corn..... you would think I had asked for gold covered diamonds or something.
