From the minute we tried homemade bread (last summer) we haven't bought a single loaf, you cannot beat it!!
I just wish I could make the rolls...

I always make our bread, I do it in batches though .... 6 loaves at a time and lob in the freezer. I use my Kenwood Chef for it, which makes my life simple! LOL!
I'm still working up to being brave enough to make bread rolls ... surely it can't be that hard?I just want to make soft rolls though ... I'm guessing milk may be involved?

I make my bread rolls in exactly the same way as I do bread except I chuck an egg in with it.
The rolls are wonderful, soft and fluffy. You can use milk powder, sometimes I do, but then again I chuck whatever I fancy into my bread. Vegetable/potato water, vinegar, whatever I fancy on the day lol!0 -
I do sometimes make my own bread - however, I have yet to find a "light fluffy" bread recipe.
I don't know where I'm going wrong? I can never get that lovely chewy bread like the tiger loaves you buy in asda or tesco.
Anyone got any great white bread recipes for me to try?
I've tried dried active yeast and also live yeast but my bread always errs on the "heavy" side.

I love HM bread as does my youngest son, the other one and his Dad prefer shop bought unfortnately but I do try and just buy when it's reduced, not by much as reductions here are naff but at least something off helps. I tend to make HM stuff and freeze in batches. I got an electric slicer, is a lot easier but still have to wait for it to cool or it 'eats it' as my son calls it.One day I might be more organised...........

I voted "usually" as this is the case with me. But there are occasions when I buy an organic hand-shaped loaf ... like when it's RFQSWarning ..... I'm a peri-menopausal axe-wielding maniac0

I think that I started to get my bread rolls better when I got a bit more patient. You really have to wait until they've risen well before you put them in the oven.skintandsad wrote: »

Apart from the salt issue, how come my homemade bread only stays fresh for a couple of days, yet supermarket bread is soft and pliable for a week or more?

I prefer making other stuff inmy breadmaker than bread. I never seem to get loaves quite right, although my pizza dough, garlic bread, rolls, hamburger rolls, croissants etc always come out lovely.
