  • I would go for Iceland, as the most "special" of the options you gave + Scandinavia and Ireland can be pretty hot in July. I would go 4 nights, 5 days and try and do whale watching for an extra lifetime lasting experience.
Scandinavia has some lovely white sandy beaches. In my experience, the Nordic countries aren't as expensive as people make out. Except for the booze. Norway is more expensive the Sweden and Denmark but that said you can do a VAT refund on certain purchases and you get real duty free at the airport because it's non EU (so is Iceland so same applies). One thing to remember is that tipping is not expected and not usual in all the Nordic countries so that saves a bit.
Flight wise, Scandinavia will come cheaper than Iceland and Ireland cheapest.

You could of course do something like UK-Copenhagen 2 nights-Iceland 3 nights-UK then you won't have the dilema!
