Best hotel deals off peak?

Hi I'm thinking of booking a break around Europe, however as I'm married with out any kids I wish to go off peak when there's no kids on their summer hols.
Basically I want to know when would be the best time to book some thing to ensure the best hotel deals. As I know during the summer the prices get inflated, so wondered when the best time would be to book after August.
I'm thinking about Madrid or Milan.

Mid september onwards - I like early october best, usually settled weather (thunderstorms are more frequent in sept). As you want a holiday in a city check with the local tourist board that there is no big conference happening as this effects prices. Check out when universities/schools re-open too. I don't know Milan, but Madrid is definately better in early October.0
