Hubby cooked a beef curry the night before last, lucky me :-) I loved it, plenty of veg in it too. He, on the other hand was really disappointed with it and refused to have the leftovers for the next night (damn!!). Whilst feeding baby at 3am inspiration hit me - once hubby had gone to work I threw all the leftovers into the food mixer and out it came as a sauce. I cooked some mince with spices (saving some for pizza topping another day!), chopped up onion, pepper, chili, garlic, and mixed everything together with the 'sauce'. I filled wraps with it, placed a little more of the 'sauce' on top, grated cheese on top of that and in the oven it went. Served it up to hubby with silent anticipation!! verdict was 'wow, this is lovely' :-) I still have enough mix leftover in the fridge for my lunch today and some 'sauce' still leftover which I'll spread on when I make my pizzas tomorrow - no tommy puree in the house and saves me going out. So the meal hubby wasn't so keen on has turned into 3 eve meals and 1 lunch and still a little sauce left over :-)

I am loving your idea - I'd never have thought of that. Your invented recipe sounds great and think I'll have to have a go at that one.

Well, I'm amazed how far this is stretching - just had my lunch and I've still enough for tomorrows lunch - seems to have improved flavour overnight too!
So that's 3 main meals, 2 lunches and still sauce to freeze. It's made life so much easier for a few days, what with time taken up constantly on baby!! I actually feel in control for the first time in 7 months!!! :-)0 -
