I have just tried making a loaf in the Kenwood Chef and baked it in the oven and the crust is very hard (that's why I started using a bread machine).
I put a tea towel over it when it came out of the oven like I do with my rolls but the crust is still hard.
Please can someone tell me what I can do?
Thanks
PS I followed the Kenwood Chef recipe.
Hi - try putting some cold left over mashed potato in your dough. This is something I discovered over the weekend. I had some leftover potato so tried a recipe i had for potato bread and the crust was lovely and soft on my loaf and made gret toast. So I then went on and made some rolls for my OH's lunch box using another recipe (not a potato bread recipe) and just bunged in some more mashed potato and they came out as lovely soft baps. I used about 125g of mash for 500g of flour. You may have to adjust your water slightly as the potato will have water in it. But don't forget that a softer, wetter dough will make lighter bread even if it seems unmanageable at first. BTW - I use a kenwood chef.0 -
If you want to make softer bread, either used mashed potato (or the water the spuds were cooked in) or use milk to make up the liquid component. Me I prefer it crusty - but either way HM bread makes far and away the best toast!
I bake on Sundays to make sandwich bread for MrS - half a loaf goes in the freezer, the rest in the breadbin.
Edited to add: I also use the Delia plain white bread recipe - can't go wrong.0 -
I make wholemeal bread, but I've used this recipe for white bread which turned out well
The basic recipe is:
1 lb flour
1 teaspoon instant yeast
1 teaspoon sugar
1 teaspoon salt
1 tablespoon oil
11 fl oz of warm water.
I use my Kenwood and knead the mix for 5 minutes with the dough hook.
It comes out of the oven crusty, but less so after being frozen.0 -
