Holiday ideas please

hi there, i'm hoping one of you loverley people can please advise....
Here is the current situation - I have 25 days of holidays left for the year, excluding Xmas Day and Boxing day, as I have to take a day of to attend a funeral in England this week.
The OH and I were thinking about going to Disney Florida/Parks as he is working in timeshare and can get us cheap accommodation. We were thinking of doing this in September but were unsure of how long we'd need as we would like to both Disney and Universal Studios, including waterparks. We also wanted to have some time in Busch Gardens, Discovery Cove and Seaworld, and possible a day each of sunbathing and shopping.
Can anyone advise on how long they think I should take off my work, and also how much the flights should cost us? We can't really afford to buy them just now but possibly in March.....
