Hi all.
I've got a big bag of cashew nuts, which i managed to get cheap before Xmas. ( i don't normally buy them, as they're so expensive).
I'm trying to use them up, as not sure how long they'll keep. We're a vegetarian and i've so far made 2 big nut roasts that are in the freezer.
Can i freeze the nuts..or do i need to grind them first??
Are there any recipes (vegetarian) that you can recommend? It's gonna take me years to use them by sprinkling the odd handful in a curry!

so long as they are airtight they should keep for a couple of months in my opinion. They may keep better if you toast them lightly but perhaps someone else can confirm that?
use them in stirfrys and currys and in rice salads - yummy yummy.

are they raw or roasted already??
If raw, you can roast them for snacks by spreading them out on a baking tray and baking them in the oven at 180'c - for no more than 5-6 minutes , stir at least twice. Once out and while still hot put in a bowl and spritz with a little olive oil and sprinkle with sea salt. Let cool and eat.
Otherwise, just keep them in a air-tight container.0 -
This week I have used OOD cashews in a loaf and it was delish, cheese and onion through the middle, should have peppers too, but dd can't eat them, make her ill. What about cashew nut butter? I haven't made it myself but bought some locally and it was delicious in sandwiches and in cookie recipes0

One of my colleagues makes cashew nut cream. I keep meaning to try it myself but haven't managed yet! This recipe for it sounds similar to what she does:

Here's a recipe for cashew butter:
2 tablespoons honey
80ml walnut/sunflower oil
250g roasted cashews
1/2 teaspoon salt
Place the honey in a microwave-safe container and heat in the microwave for 15 seconds. Remove from the microwave and add the oil to the container. Place the nuts and salt in the bowl of a food processor and pulse for 5 seconds. Then, while the processor is running, very slowly drizzle in the honey and oil. Process until an emulsion is formed and the mixture is smooth; this will take approximately 45 seconds to 1 minute. If the mixture is too thick and doesn't spread easily, add a little more oil. Should keep in an airtight container in the fridge for a couple of weeks.2015 comp wins - £370.25
