Hi,
Run a business - where people pay for product, and send confirmation form - howeverf I never actually send an invoice, and only rarely send a receipt. Should I be??
I keep good records of money in and out, but not sure if this is enough?
Any thoughts - should I start invoicing?
Any help appreciated,

Yes it sounds like that you should be raising an invoice for every sale. The records that you keep depend upon the type of business you run. If, like me, you don't have a premises like a shop where customers come to you, then you wont have a till so items 1 and 2 below will not apply but items 3 and 4 will.
The list of supporting documents for sales that the IR may require are
* Till rolls or other records of takings
* Hardcopy from computerised tills
*Bank paying in books/statements
* Sales invoices
