I was thinking of doing something like this but didn't know whether it was safe to freeze the cooked meat and then eat it without cooking again. I've never cooked proper meat and my mum is vege too so I have absolutely no idea/experience of what's safe and what's not when it comes to both raw and cooked meat.

Actually I have never thought about that but we have been doing it for ages and have been ok so I am pretty sure it is safe.

It is possible to buy Quorn sliced 'meats' that are very nice. My friend gave me a sandwich made with some 'ham' and I thoroughly enjoyed it.

It's perfectly OK to do this ;) I freeze cooked ham in sandwich amounts and make sandwiches for my lot.
