Alternative to cooked sliced meat

Hiya,
After watching Hugh's Chicken run I've decided to try and get better quality meat. Trouble is there's only OH that eats it, I'm vege and have been most of my life .I don't like touching meat and to be honest wouldn't know where to start with cooking it.
At the moment, OH tends to eat vege most of the time and just has pre-packed (made from god know what) meat for sandwiches and the odd burger/chicken breast/bacon that can just get chucked in the health grill.
It's not too hard to find free range for the other stuff but I've never seen anything that could be used for sandwiches. He only uses about a pack of 5/7 slices a week (don't know how good this is as it says to eat within 2days of opening- but he's never been ill with it) and tends to have either chicken, ham or beef.
Any ideas of alternatives that could be made from better meat in small portions and kept in the fridge (and a bit of guidence on what to do with it/ how long it can be kept etc.)

  • How about eggy weggy, oh sorry egg mayonnaise? There's basic plain eggy weggy, or add spring onions or then you can have curried eggy, mustard eggy, sweet chilli eggy or add some small pieces of cooked bacon to any of these.
    Same with cooked chicken, chop it up add mayo then flavour to taste. Or grated cheese and spring onion. Tuna mayo, again you can give this lots of different flavours.
    Does it have to be sandwiches, how about potato or pasta salads, there's loads of scope with them.

    I make sandwiches for OH from chopped leftover chicken with seasoned mayonnaise or on its own with stuffing.

    See this thread on cooking and slicing a whole joint of ham/gammon. It may seem expensive at first but as you can see from the figures it is in fact cheaper.

    Buy a free-range chicken and give OH a leg with gravy etc then slice the rest as thinly as possible (best done when completely cold). Use as sandwiches for the next couple of days.

    Or, give him tuna/sardines/smoked mackerel pate/kipper paste/prawns
  • I w***one day a week out of the office, so eat my lunch in the car on my way there. I find a sandwich tends to disintegrate all over my lap, so I've been taking some fresh HM bread and a banana. If I were able to sit down, I'd make it into a sandwich ;) In the summer, you can't beat a fresh raspberry or strawberry sandwich, either :T

    It is possible to buy Quorn sliced 'meats' that are very nice. My friend gave me a sandwich made with some 'ham' and I thoroughly enjoyed it.
  • instead of buying packs of meat slices for sandwiches, we buy a whole free range chicken from our butcher once a week. We roast it and then use the meat for sandwiches for the entire week. There ae two of us so we freeze half of the meat for the second half of the week. If it is just your OH, you could freeze the meat into portions so you can just take out enough for the lunch/sandwich.

    And don't forget you can make stock from the bones so getting another meal - ie soup!

    I thought about this too - as this is one of my favourites, but I haven't been able to buy gammon free range or organic, so was nervous about recommending this.

    Thiftlady, I know you prefer organic, have you been able to find any gammon free range or organic?

    I was thinking of doing something like this but didn't know whether it was safe to freeze the cooked meat and then eat it without cooking again. I've never cooked proper meat and my mum is vege too so I have absolutely no idea/experience of what's safe and what's not when it comes to both raw and cooked meat. Also a whole chicken seems a lot of meat when there's people that say they can feed a whole family for a few days on one chicken, but if you're able to roast it then freeze then this wouldn't be so much of a problem.

    I like the idea of roasting the meat then slicing it up but need something I can do in small quantities.

    Thanks for everyone elses ideas for sandwich fillings - unfortunatly OH is quite fussy and likes his sandwiches plain - just marg and meat, nothing else (and he doesn't like tuna/mayo/salad or anything like that) occasionally he'll have brown sauce on beef or a bit of chutney but that's about it! I have quorn sometimes but as it's normally the only time he gets to have real meat he doesn't want it in his sandwiches.

    Actually I don't generally buy organic, but I do buy free range chicken and eggs and pork sometimes. I bought a free range gammon joint at Waitrose for Christmas.

    I think that Waitrose are by far the most responsible supermarket when it comes to sourcing their meat and fish. I think this is why they are perceived as more expensive. They don't seem stock bottom of the range bargain meat ;) See here.
