Advice re Crete Holiday with 3 adults 1 infant

I am hoping that someone can offer me some advice here.
We are hoping to book a holiday to Crete in the summer for myself and my husband, my daughter and my mother.
We would like 2 rooms - one for myself, husband and child and another for my mother. I know that it is likely that we will have to pay a supplement for the single room but we are struggling to find accommodation at a reasonable cost that will accommodate our needs as most double rooms will not take two adults and a child.
My daughter will be two in August. Our options are therefore:
Travel in late June (preferred date 26/6) - my daughter will be an infant
Travel in early September (4/9) - my daughter will be a child
We would prefer half board (or all inclusive would be a bonus). We would prefer not to go self catering unless we get desperate!
(I notice that some of the flight times are awful - 7am going out and 2.30am coming back - we would prefer to have reasonable times of possible)
I'd be grateful for any opinions.

Even if you go for June you may want to take your daughter as a child rather than an infant (you always used to be able to do it) as you will get a seat and therefore luggage allowance and also with Free Kids places still around you won't pay anything for her as opposed to the infant charges.
Flight times to Greece are generally rubbish unfortunately.
Most 3* + hotel rooms will accommodate 2 adults and a child easily, or consider a 2 bedroomed apartment. Under occupancy supplements could make that more expensive thoughIt's taken me years of experience to get this cynical0
