A quick and easy Lemon Sauce can be made with Lemon Marmalade, just melt little into your dish before you serve. Add more if you want to make it into a chinese type lemon sauce.

Hmm... I'd considered knocking up a batch of mayonnaise with lots of extra lemon but it's rather thicker than I wanted (fussy old me) because I have in mind serving up on a flat dish with them sitting in a sea of runny sauce that can be mopped up with chunky HM bread rolls...

Just found this sauce of the bbc foods websites. It's to go with Salmon so should (hopefully!) go quite well with prawns.......

I wish I'd seen that before I startedI did a variation on a theme - 50ml oil, 100ml lemon juice + zest, 1 tbsp cornflour, 1/2 chicken stock cube, 1/2 tbsp sugar, pinch each of salt and mixed herbs and topped up with 150ml water.
Whizzed the whole lot cold with the stick blender, brought it to the boil and simmered till it showed signs of thickening (not long at all).
Oh, and there was a pinch of turmeric in there to help with colour.
It's about custard consistency and the prawns are slowly sinking into about 3mm of it on small plates as we speak. A slightly odd flavour, but I'm sure it'll grow on me
Roast is done and cooling. Meringue the same, and also the lemon curd.
