I am not sure that any of the facilities that were not available necessarily qualify as reduction in provision. The ice cream bar was not open but, presumably, other locations where an ice cream can be ordered. Same with restaurants - there might be several listed on the details but it is not unusual for the restaurants to all serve the same buffet.

The £250 compensation might even be generous.

The devil might be in the detail. Consider the restaurants, if the descriptor was more than "xxx restaurants on site" but more specific, say:

    - A choice of three family-friendly buffet restaurants

    - American diner restaurant

    - Oriental feast restaurant

    - Fine dining restaurant (jacket and tie or below-the-knee dress required)

    - Proper English Fish & Chips bar

    - Irish pub

If, then, the themed restaurants were not there and all you had was the three buffet restaurants, that is a more material change.

    Overwhelmingly positive opinions on TripAdvisor.

Of course that doesn't mean that complaints are unjustified where a guest has had issues.

I suspect that failing to raise issues with the hotel or Easyjet during your stay will weaken any claim you make. Had issues been raised when you were there, Easyjet may have been able to move you to another hotel.
