Without knowing how much the room cost nobody can tell you if the offer is enough or not.
As far as I know star rating is based on facilities available , not price, and are unique to whoever rated them.
There is no universal rating system.

… all of the other hotels were lower star rating
That still doesn't matter. The cost per room per night for a 2-star hotel could be more than the cost per room per night for a 5-star hotel if the nights and locations are different.
Which hotel was it, and which night?

Thnaks.
Obviously I can't look at prices for May 15th 2026; that's long gone.
A night in mid-August is currently about £280, although the cheapest nights are under £240.
The night of May 15-16th 2027 is available for £352 (king) / £371 (twin).
It's not a huge stretch to think that the package holiday company only paid £191 per room per night for your stay, depending on exactly when you booked and what deal the holiday company has with their hotel providers.
(I'm not a travel agent and I can't offer any specific insights, sorry.)

Sure; they're from https://www.super.com/ (which I found via Google) - apparently they're a billion-dollar US platform.
Here's an example. Membership is free for the first 5 days, so you could get member rates.
