How could you cancel the flight if the bus put you in a deep coma, being incapable of cancelling the flight before you go?

For a single trip the premium will increase the further out it is but it tends to go in bands. For example doing a quote for a 8 day holiday in Portugal StaySure want £35 if I go next week or in a month but if I go in December its £65 and April 2027 they want £80

You are misunderstanding what the medical cover on travel insurance is for. It has nothing to do with getting treatment in the UK. There are two situations when the medical part of travel insurance covers you.
One is for medical treatment you may need during the period of insurance, from the time you leave home until you return home.
The other is to cover any travel expenditure, should you have to cancel for a medical reason. As has been mentioned, should you have an accident before you travel, without travel insurance, you will be liable for all costs.
You said you have paid "a bit extra" so that you can cancel the flight should you wish to. Have you read the T&Cs of the additonal cover you have bought? I don't know what type of cover you have paid for, but you should check the T&Cs to see if there are any exclusions.
I don't understand why you were willing to pay the additonal cover for the flights, but not for, what you perceive to be, a "higher premium" for travel insurance. For clarity, travel insurance would not be more expensive 3 weeks before departure.

That sounds like what I'm talking about. The further away the holiday is, the higher the insurance premium because they are covering a longer time.

That is what I am saying. I don't need insurance to get medical treatment while I'm still in the UK for the next 3 weeks. I do for, as you say, from leaving home until I return. I won't have any costs other than the flights (no taxis to get to the airport, no hotel, no prepaid trips while I'm away).
This is what I have chosen. I could have paid slightly less but would have to pay £150 to change my flight if necessary, and would not get any money back if I cancelled (both of which are a possibility).

- 1 hand baggage item(s) (55 x 35 x 25 cm)* **
- 1 checked bag(s) (23 kg each)

It isn't that I don't want to pay a higher premium for the insurance. It just felt that I was paying twice for the same thing - so that I would get my money back if I cancelled.

I hate to worry you, but Air France do not fly to Australia at all! You may be booked on a code share, where is your flight stopping on the way?
