I only book holidays around 7 days before departure. Never had a problem.

I was just thinking of this thread as my wife decided she wanted a week away in the middle of August, so we looked at the offers we had landed via marketing this week and shortlisted four options. Playing around with the days made a big difference. Rather than Saturday to Saturday (7 nights) we are going Sunday to Friday (5 nights) and the cost was exactly half. That seems like a good hack to me.
