A decent 'emergency' cheap mobile phone - recommendation?

I bought an iPhone SE 2020 for £50. Accepts the latest iOS version.

She could go even cheaper with an iPhone SE 2016. I paid £20 for one of those, via eBay.

I have bought from Backmarket and very happy with the purchase of a samsung note 10 plus bought a few years back ( still my primary phone).
There is a 12 month warranty from the actual vendor but also a free 30 days return policy.
I would use their 30 days return policy to get a credit note against a decent low end Samsung product possibly from their A series.
An IPhone 6s, even without any of the obvious operational faults you outlined, would be a poor stop gap phone now, given Apple's cynical policy of software and system updates in those earlier generation of phones designed to throttle functionality and drive users to upgrade sooner rather than later.
I doubt that even your iPhone 7 would be able to do much beyond what you currently use it for. Perhaps you missed this class action against the company -

if it’s only 10 days why doesn’t she just go without one until hers is repaired?

At Christmas, Tesco kindly sold me a Moto g 06 for the bargain price of £30.
I purchased it solely to provide an emergency back up phone should the need arise.
It remains in the box in the desk drawer.
Have a look around and see what similar offers are available just on the High Street.
Alternatively, do you have access to an old phone from before the current phone became her phone? Many of us have a drawer somewhere with all sorts of previous phones simply on the basis there is limited outlet for them.

Credit note against another phone?
Do they not to proper refunds? Their policy suggested they do.
Or are they a Sports Direct type company?
