Gift Aid and becoming a non taxpayer mid-year
I will stop paying tax next month (June), but have paid tax in April and May this tax year. At which point do I have to inform Charities that I am no longer a tax payer? I don't want to get a bill down the line.

You will need to have paid sufficient tax in the tax year at least equal to the amounts the charity will claim back from HMRC in the financial year.

Thanks, that's helpful. So I will possibly have to notify some of the charities I support, but not all, with the calculation you suggest in mind.

Chapter 3.5 Tax to cover
3.5.1 Donors must be charged an amount of either Income Tax or Capital Gains Tax, or both, whether at the basic rate or some other rate, for the tax year in which Gift Aid donations are made. It needs to be at least equal to the Income Tax treated as deducted from the total of all their Gift Aid donations made in the same tax year.
Donors who have not been charged sufficient tax to cover the Income Tax deducted from their Gift Aid donations are responsible for paying any difference.

But bear in mind that any tax you've paid in April and May might be refunded to you later in the year.

It is your annual tax paid that matters.
If any tax already deducted is repaid before April 2027 you may get a bill for the gift aid relief claimed by the charities.
Iof you continue to be a non tax payer in future years then you will need to cancel the gift aid .
