glyphosate. Wrap the bindweed round the stem of a stick, and then spray it.
Once it gets down to the roots, the glyphosate will kill it. Don’t try digging it up - if you leave any bit of root behind it will sprout again.

Roundup gel, unless you have a huge area of bindweed. That way you can target the weed rather than anything it might be trying to climb up. Obvs disentangle it from anything nice before you hit it with what is I think glyphosate. It may take two or three seasons to get rid of it.

Bindweed is incredibly frustrating! You definitely want to follow the advice above regarding glyphosate, as digging it up usually just multiplies the problem.
To make the job easier, try pushing bamboo canes into the soil near the shoots. The bindweed will naturally climb up them. Once it is isolated on the canes, it is much easier to apply a targeted weedkiller gel or spray without accidentally drifting onto the garden plants you actually want to keep.
Keep at it over the summer whenever you see new growth, and you will eventually starve out the root system.

Thanks to everyone for the replies. I'm going down the glyphosate route especially as I can use it for the other weeds that have appeared
