I think thats a little unfair, I dont think speed or convenience are incompatible with good service, in fact in many cases they can be an example of good service.

A wealthy associate I was travelling with turned up at JFK at around 8pm but turned out his bag had gone to Singapore instead. We had a 9am meeting with some people that the airplane clothes really wouldnt be appropriate to wear. A call to his card company and by the time we got to the hotel they had arranged for Macy's to be at his suite with a selection of suits/shirts etc in sizes around his normal for him to try on and buy. I'd call that highly convenient, very speed and exceptional service.

Price however I am with you on, spending lemonade money but expecting a champagne experience isnt going to happen 99% of the time. Unfortunately as people continue to prioritise price over value (for various reasons) it's creating a race to the bottom. To me its leaving a gap in the middle… top end stuff is still great and good service but is unaffordable to many, the budget end of the market is well catered for, the middle market is being abandoned as they've moved downwards.
