Where do I take this??
I bought a new cooker online and had it the next day. Brilliant. However, a part its needing is missing. I've message this company since January who reply instantly and say they'll message the manufacturer to get this missing part sent out. First I'll have it in 3 days then weeks later, 5 - 10 days. Its now been two weeks. The company are doing their bit by messaging the manufacturer, its THEM that are messing me about. I want to write another email today as I've been very polite up until now but enough is enough. How do I get this sorted?

You tell the retailer you want to reject it. No matter that it's the manufacturer causing the problem, your contract is with the retailer. That might prompt the retailer to offer to replace it, which I presume would be satisfactory?
Is it useable without the part? Has it been installed and have you used it?

To be honest, its only a handle to use to get the grill out of the top oven. As I said to the retailer, yes I can easily go out and purchase one but its not the point. It should have come with the cooker as stated.

From that, I assume it's installed and you're using it. Therefore, it depends how far you want to push it and how much hassle you want to incur. If you up the ante and the solution is a replacement appliance or a refund, do you want to go through the inconvenience that would entail? Or is it better to wait longer and see if the part emerges?
Or just ask the retailer if they'll reimburse you if you buy the part yourself. Simpler all-round for both parties, perhaps?

Given it's that - the least hassle option is to either wait, or do as Aylesbury_Duck suggests and speak to the retailer about them reimbursing you for one you've bought. Unless your grill pan as a weird shape they most grill handles are pretty standard and you can pick one up for less than a tenner.

are yiu sure the handle is a missing part? The last 2 ovens we have bought ( both Bosch) don’t come with a handle for the grill pan

Looking at the cost of them on google, just how much time & effort do you want to spend?
Just email manufacture, rather than retailer. Might get a better response.

Same for my Bosch oven, while the pan has a slot for a handle it didn't come with one, I just use oven gloves to handle the hot grill pan.

They don't come as standard anymore. I asked about it when we replaced our cooker recently. For what it is worth, I was told that it's because grill pan handles are a health & safety risk (too easy for a child to grab apparently).
