I suppose how long an air fryer is expected to last is not really the cases of the air fryer that just kept going forever but how long an average air fryer would last with average level of use. Maybe, how long before the average person would feel short-changed if the air fryer went wrong and needed replacing.
There are always the tales of the domestic item that just lasts forever - My Mum is very proud to still have the same fridge that was a Wedding Present over 60 years back now - such an anecdote does not make the expected life of a fridge 60 years or more.
I think, generally, with air fryers (as you noted) being very low cost consumer goods, I (and potentially many people) would be happy enough if t unit has lasted a couple / few years. The OP was saying their original air fryer had only lasted 2 years. It is important, for consumer rights, to assess that against what is typically expected. Even then, there will always be units that fail prematurely and do not necessarily give rise to a consumer rights claim.
In addition, people do not always know how long they had something. Last autumn (2025) our iron needed replacing and I grumbled to myself that it had only lasted a couple of years. Regardless, we popped out an bought a new one. A week ago, I was clearing some stuff out and found the receipt for the old iron - it was purchased in 2019 which is a lot longer than the in-my-mind "couple of years". How accurate is the OP's "only lasted 2 years"?
