Travel insurance
I've recently spent over £7K on flights to see relatives in the USA and looking to get insurance before we travel, if for some reason flights are cancelled i've noticed that insurance quotes i have had only cover you up between £1-3K, if for any reason we can't fly, could i cliam on my credit card to cover the cost?

All depends on the reason.
If it is because you are ill or such, then no, CC will not cover you.

Is the cover per person or per group? Or is it a selection of flights with stop overs? These things may change what's covered.

IIs That £7k for one person? Travel insurance cover is generally per person - our family policy covers cancellation up to £5k, so for the 3 of us that's £15k total.
There are platinum and premium policies that cover cancellation up to £10k per person, but they are pricy.

The amount covered is normally per person. Cover of 1-3K looks low to me. Are you getting your quotes via a comparison site?
Most insurers offer different levels of cover, eg Bronze, Silver, Gold, etc. You should see some of those listed in quote results or by going directly to an insurer's website.
For the US, medical cover is even more important than cancellation cover. Make sure you declare all pre-existing medical conditions for everyone travelling.
If you needed to cancel, it would need to be for an insured reason before insurance would cover you. For example, you wouldn't be covered if you just changed your mind about travelling. Section 75 on your credit card would only apply if the supplier / airline didn't supply the flights. If the flights are still available, even though you're not on them, Section 75 wouldn't apply.
You should read the policy wording of any travel insurance policy you are considering to make sure it covers what you need it to.

The limit is per person.
You can easily get limits up to £10k by choosing a higher tier provider. You can get limits up to £20k pp with a standard quote and buy type setup online. Higher limits are available but you are then in the realms of talking to specialist brokers etc.
