A I eBay Scam
So recently this has appeared where you sell something and the buyer claims it arrived smashed but sends a photo showing an AI adaptation of your item broken. There are ways around this software tools to determine if it's fake. But I'm I'm just wondering if eBay themselves, being into using AI, have or will factor in protection against the possibility of future scammers, especially for older sellers that would probably just refund.

That's just an example top being AI made to look mouldy. So you can see how easy it is to produce these images.

Ebay is saturated with fake items in certain catagorys so much so its impossible to know which are real and which are not .
I doubt Ebay would give a toss …….unless it hits them financially ie. costs them money

This particular scam will cost them money if SD postage is used. The OP isn't about AI scams on listings, but about fake claims.
This has been reported a couple of times on various Vinted forums already.

eBay's "AI" is rubbish: the item descriptions are a paragraph of generic waffle with a couple of item-specific keywords chucked in and their "we found nothing wrong" responses to counterfeit item reports are endorsing fraud.
It looks to me like this particular one is a slam-dunk though; it is evidently a doctored version of the same picture.
