...looking to go to Australia in early summer but wanted to stop somewhere on the way for a couple of nights. Was looking at Dubai or Hong Kong - does anyone know how you can do this without making the flights well more expensive? It seems to mean they go up by about 200 quid when you stop for a couple of days rather than hours. Ta

A flight on Emirates will include a stopover in Dubai at no extra cost.
Otherwise, see if you can find cheap flights to Hong Kong on Oasis, and buy onward tickets between there and Australia separately.0
