Due to my health I can no longer get Insurance.
But we used to book our own flights etc. rather than Jet2 or Tui because these Tour operators mostly take off between 6 and 7am and we hated the getting up in the middle of the night. So mainly used Ryan Air taking off a few hours later.

We've used Jet2 for years for both packages and flights. Their customer service is far, far better than TUI. If you do look at TUI holidays check who you will actually be flying with as they have contracted out flights to Easyjet (not too bad) and Ryanair (reputedly the worst customer service of the lot)

S75 is not gong to cover the same as insurance,
You really need to explain exactly what situation you are hoping S75 to help, when you do not have insurance.
So just like creditor /debtor link. If your flight gets canceled/delayed. S75 would not cover your hotel booking.
S75 will not bring you home if you fall ill, or if your illness stops you from travelling.

My parents use SAGA for all their holidays now they're 'older'.
Money isn't an issue for them but they just don't want the hassle any more of planning so they like the fact that SAGA even include the transfer from your home to the airport.

We have just returned from a hotel in the Canary Islands. We always visit this particular hotel in January and we book through Jet2. However, a great many of the other guests are with Saga. Many are long stay customers, a month or more. I have to say, Saga really go the extra mile to look after these mostly elderly people. The rep is always around and even sits with them most nights for dinner. I’m sure this service comes at a premium but must be reassuring when you’re older.

I really cannot think of anything worse in a normal holiday context than a travel rep sitting with me for dinner pretending to be my friend.

I totally agree but it was clear the Saga guests enjoyed her company. The ones who wanted to dine independently were free to do so.

You don't actually have to sit with the rep! They're just always available should you need them, and very knowledgable and sort stuff out for you if there's something in particularly you'd like to do or need.
My parents are "elderly" but very young at heart and hugely independent so love galivanting around cities and exploring. Saga do a variety of packages to suit various needs. My parents just like the fact that it takes away a lot of the stress as everything is so well planned. According to them it really isn't that much of a premium to pay. My dad is not the type to spend money if he doesn't need to!!
On the one occasion that one of their suitcases went astray the other year, the rep was brilliant and helped them get to suitable shops to buy clothes without eating too much into their itinerary.
