Sim for use in NZ and Aus for local calls and data

I'm looking for advice on getting a SIM or eSIM to use for around 30 days in New Zealand and Australia. I'm interested in local calls and texts and a small amount of data (say 1-2Gb).
Anybody have any advice on the best service provider in terms of coverage?

Family over there use Aldi Mobile - just get a SIM card from the Aldi store and then add the plan. This is the Sydney area up and down the coast around there, but reception could vary elsewhere.... it's a big country!

Very straightforward for me in New Zealand last year with the Spark travel pack linked above which gives a limited period SIM. They had a kiosk in the airport (Christchurch) and were even changing SIMs over for people on the spot. 

I've since bought e-sims for other countries, but they have been data only. For New Zealand we needed phone calls as well.
