How do I insure a large item that is being collected by a courier and taken away for repair?

The courier should be able to provide cover.

Same way you insure a small one... its very expensive things that can get expensive to buy cover for. Who arranged the courier? If its not you then normally the party paying the courier will be on the hook ultimately irrespective if they chose to insure it or not.

Read the couriers T/C.
Many items will not be covered. Will require adequate protective packaging. 
End of the day it is not Insurance they provide.
