What will happen to my coop current account if I cancel all direct debits and stop paying in £1000 a month after I get my last £25 on 5th February?

Will I still be able to convert it to an Everyday Account for the travel insurance if I need it before I turn 80 at the end of the year?

Unless the incentive terms specify any circumstances under which the payment can be clawed back, you're free to do what you like with the account after receiving it.
