If they were indeed chip and pin they would have first had to get into the locker (they may have got the code when you opened it) then have a suitable card machine to put the cards in. They may have got the pin for the credit card earlier by devious means but if as you say you never use the debit card they would not have had an opportunity to get one for that.
I am surprised they are refusing refund for chip and pin. I had my HSBC debit card stolen some years ago and they managed to get the pin (surrepticiously filming me when they tricked me into entering it, yes I was careless..). It was used shortly afterwards at a cash machine and then in Selfridges where they stole a similar amount to you using chip and pin. HSBC refund for the Selfridges one without question, and they only hesitated with the cash machine one as I could have physically gone to the machine itself. And for what it is worth I contacted Selfridges who claimed they had a video of the transaction but when the police asked for it it had mysteriously been overwritten...
Ask HSBC how they are so sure it was chip and pin and why they are refusing to refund. Thieves have all sorts of ways of finding pins.0 -
Card systems show exactly how transaction are made, these are not banks systems but via card providers systems & the data from terminals.Life in the slow lane0

OP, have you looked at the transaction details in your app/online banking. Often it also provides "enhanced" transaction details, depending on the bank and which card provider they use (eg, Visa or MC).0

The transactions dont have details how they were done on the app. It just gives 2 sets of numbers - guessing one is the terminal number/merchant number and the other transaction number.
