Trying to understand Microsoft Photos ...

When I open the MS Photos app on my laptop and click on "Gallery", up comes a vast amount of photos. Where are they all stored? Where's it pulling them from?

Also anything in your "Pictures" folder - which may contain may other folders and MS Cloud content.2

In the MS Photos app, if you take the Expand (Hamburger) icon at the top left it will show you the various sources of photos it is using. The default is probably your MS OneDrive storage, followed by your local drive on your laptop.3
