I've always thought the coolant level is perfectly fine is it's above minimum mark.

However, if it does drop below that, and continue to drop, then you do have an issue.

If you keep topping it up to max, it will overflow when engine gets hot.

Try not to keep topping it up for a few weeks, but do check to ensure it doesn't go below the minumim.

So hopefully you can appreciate how wary I am now especially with a new car with the coolant level apparently dropping over an extremely short space of time.
Maybe try & put some meaningful miles on it to see if it keeps dropping or if it stabalises , alternatively get the coolant system pressure tested.

I took it back to car dealer I bought it from yesterday to investigate
    What was the outcome?

They said there was a pipe loose on the coolant loop, I checked the coolant level when I collected the car and checked it again after drove 50 miles home, hasn't dropped one bit. Although they had filled the expansion tank to over the maximum mark. But can't grumble as it doesn't seem to have dropped.
