Simple Delivery : Insurance for high value items

Previously, before 'Simple Delivery' if I was selling a high-value item, I could select the appropriate courier and add in a factor to over any insurance.
If something sold for a lot more than I had expected, I could simple change the delivery option, and pay for the extra coverage myself.
Now however, it seems the standard delivery options only are available.
If I see something, that I hope makes about £400, which courier would | opt for please ?
