    IMHO you have four things going on here (price, project, planning, people)
    However my gut feeling is you have one thing on your mind ----> price (and you feel ripped off)

    1) Price -----> seems like you agreed to a verbal price -----> you want an extension and kitchen fitted and it will cost £x  -----> you have an extension and kitchen (and you should have paid £x). So aslong as £x is the same as the quote everything is cool.

    HOWEVER

    2) Project is not as per the plans -----> the roof is different. -----> are you happy with the roof -----> seems to me yes, then everything is cool.

    HOWEVER

    3) Planning, what is the situation with them? (was planning even needed? was building regs needed?) -----> i would be concerned about making sure everything was kosher with planning. When the builder decided to change the roof, why was there no discussion with planning?

    ALSO

    4) People (i.e. other builders) have told you "you were taken advantage of" -----> I'm highly suspicious of this. It doesn’t necessarily mean it’s true (There may have been structural reasons for the change and not because its cheaper). Did any of these other builders actually come to your house and look at the work. Did they give you a breakdown of the job/price? ----> if they didn't its speculation. 


    If your happy with the job and there are no issue with planning i would either leave it at that. Or if you want a breakdown of the cost do ask for one (but be prepared to receive a piece of paper that justifies the final price paid).
