Read the NEWBIES thread, suggested appealing  to the supermarket (Sainsburys) first, is this best to do in person to the store manager or is there an online email/form I could submit?

They have photos of the car clearly over the line on the letter

Yes, go to the store and ask for the manager and don't leave until you see someone, create a long queue at the customer service desk if you have to and then ask the manager politely but forcefully to have the PCN cancelled.  If they refuse tell them that you, your family and friends will no longer be shopping at their supermarket.  If their tame parking management company was actually managing the car park instead of just issuing money-making tickets, there would have been space for you to park properly and not be forced over the line by other inconsiderate motorists.
