A bit of context:

I signed up for a gym. Never went, called to cancel, was told to coming in, couldn't so took money out of that account, there was no direct debit showing so I told the bank the card has been lost send me a new one. Went abroad for work. Come back a few months later put money into the account and some time later the gym takes out several payments.

My question is - if there is no DD and they don't have the big number and the security code of the new card how did they take the money?

Did you set up a direct debit when you were originally signed up to the gym?
Having a new card does not automatically cancel a direct debit.
All shall be well, and all shall be well, and all manner of things shall be well.

Pedant alert - it's could have, not could of.

Replacement cards are linked to their previous versions and your account even if a new number is issued to allow any continuous payment authorities to continue for subscriptions where you have forgotten to update those card details.

You should've cancelled the gym subscription in writing, made sure you had acknowledgement AND cancelled the payment authority with your bank.

Continuous payment authorities, if you report your card lost or stolen all the businesses that you had already setup a CPA with are given the new card number automatically. For CPA payments security codes arent used (nor expiry date)

The idea is that you being dopy, unlucky or robbed shouldn't mean your car insurance or TV licence gets cancelled because the card has been stopped. Life continues for all those things that you are paying by CPA but no one who finds/stole  your card can use it to buy stuff.
