I do not believe "hotel patrons only" is a condition of the contract...
If I were to park there and not go to the hotel, then this would be trespass and not a contract breach - it can't be both...
Further down, the sign outlines the conditions - which does not include being a hotel patron, and these are "listed below".

If you are not a "customer" (whatever that means) there is nothing in the contract where you agree to pay a charge for a breach of that condition.
Any trespass within the payable times would be superseded by the £100 charge for not paying.
(all within the sphere of the £100 charge being possibly / probably unenforceable etc. anyway).
But you could argue it would be a case of trespass if you were not a customer and parked outside the chargeable hours of Sunday 3pm - Friday 5pm.
(why not just say payment not required between Friday 5pm and Sunday 3pm ???)2
