I think it is called hock in less favoured parts of the country, although a glass of Hock with it on a Sunday is nice.Emmia said:

The best way to make Lentil soup is the way your Granny made it, which would require Ham Ribs or a Ham Hough to give body to the soup and a bit of meat for the soup or lunch the next day.

Would toppings work? I like a pinch of chilli flakes, roasted seeds, Dukkah mix depending on the soup. Ras en hanout spices make a lovely soup base, subtle flavours.3

I make a simple tomato and red lentil soup very similar to this, I usually add a squeeze of lemon juice at the end.

Depending how hot you like it? Maybe start with one as you can add but not take away! Very similar in carb content to 'normal' potatoes, but higher in Vitamin A, antioxidants and fibre. The purple sweet potatoes, if you can get them, are the basis of the Okinawan diet, which (you may already be aware) is a 'blue zone' area where there's a higher percentage of people staying alive and healthy to great old age. In other words, yes there are carbs (and both potatoes and sweet potatoes are a source of vitamin C) but, as with most veg, there are also lots of other goodies.WIAWSNB said:

Really easy to make, and mostly store cupboard ingredients. I swopped celery for garlic cloves, olive oil for spray, and used plain chopped tomatoes. Topped with seed mix and I have a pitta bread to dip. You can use whatever spices you have to taste. One of my favourites.1
