Moving this to old style MSE, as (sadly) home cooking seems to be more old style in these days of take aways and delivery services.I'm a Forum Ambassador on the housing, mortgages & student money saving boards. The best way to make Lentil soup is the way your Granny made it, which would require Ham Ribs or a Ham Hough to give body to the soup and a bit of meat for the soup or lunch the next day.
Edit, soak the Ham Hough for a couple of hours first then use fresh water.0 -
Would toppings work? I like a pinch of chilli flakes, roasted seeds, Dukkah mix depending on the soup. Ras en hanout spices make a lovely soup base, subtle flavours.2

I make a simple tomato and red lentil soup very similar to this, I usually add a squeeze of lemon juice at the end.

Really easy to make, and mostly store cupboard ingredients. I swopped celery for garlic cloves, olive oil for spray, and used plain chopped tomatoes. Topped with seed mix and I have a pitta bread to dip. You can use whatever spices you have to taste. One of my favourites.1
